Covid increases the awareness of remote working luckily. As a graphic designer, I was spending so much time on the computer; this was causing not having enough time for shopping or cooking. Eventually, I started to gain weight and eat junk food a lot. To stop this, I searched for an online food ordering service and decided to go with Gousto. I loved their branding and brand messaging, as well as their recipes. Since I’m Turkish and enjoy the Mediterranean diet, their recipes were the closest one to my taste. To keep everything in my archive, I’m writing their recipes in here too for future reference.
Recipe for 2
INGREDIENTS
Vegetable oil
1 spring onion
160g trimmed fine green beans
250 g diced chicken breast
15g ginger & garlic paste
2 medium egg noodle nests
26g smooth peanut butter
2 sriracha hot chilli sauce sachets (16ml)
½ tsp dried chilli flakes
25g honey
15ml rice vinegar
15ml soy sauce
25g roasted peanuts
METHOD
Boil a kettle and heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a medium-high heat. Trim, then slice the spring onion roughly. Chop the green beans in half. Once the pan is hot, add the diced chicken breast and ginger & garlic paste and cook for 5-6min or until starting to brown.
While the chicken cooks, add the medium egg noodles to a pot and cover with boiled water until fully submerged. Bring to the boil over a high heat and cook for 5-6min or until cooked with a slight bite. Once cooked, drain and reserve a cup of the starchy noodle water
Once the chicken is starting to brown, add the halved green beans and cook for a further 3-4 min or until starting to soften and the chicken is cooked through (no pink meat!)
Meanwhile, add the peanut butter, sriracha, chilli flakes, honey, rice vinegar and soy sauce to a bowl. Add 2 tbsp water and 1tbsp vegetable oil and give everything a good mix up – this is your spicy peanut sauce
Once the chicken is cooked, add the spicy peanut sauce and drained noodles and give everything a good mix up – these are your spicy peanut chicken noodles. Add a splash of the reserved starchy noodle water if it’s looking a little dry.
Crush the peanuts in the bag with a rolling pin.
Serve the spicy peanut chicken noodles and garnish with the crushed peanuts and sliced spring onions.
