PRAWN WITH CURRY SAUCE


Prawn with Curry Sauce

One day my friend Bruno from Porto invited me to dinner. He was fond of spicy food. He discovered a new recipe that he wanted to share with me. We first did the shopping then cooked together. I think the origin of this recipe is either Thai or Indian. However, he was watching videos from a Portuguese man. It was my first time trying spicy curry sauce. However, I fell in love with this recipe right away. Below is the video that we were watching

Ingredients for 2

  • 2 tablespoon olive oil
  • 1 tablespoon fresh ginger, grated
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 4 tablespoons of creamy coconut milk
  • Piri piri to taste
  • ½ teaspoon white pepper
  • 3 tablespoon curry
  • 1 tablespoon turmeric
  • Salt to taste
  • 250 gr prawns

Method

  1. Heat the olive oil in a pan over medium heat. Add the onion and ginger and saute, stirring frequently, until they are soft and golden-brown
  2. Add 2 cups of water and blend the onion and ginger mixture using hand blender.
  3. Once boiled add green pepper, coconut milk, piri piri, white pepper, curry, turmeric, salt and prawns, stir well
  4. Reduce heat and simmer until desired consistency is reached.
  5. Serve with rice
